Israeli Salad

Salad

3 cucumbers – peeled and diced
1 large tomato, diced
2 green onions, sliced
1/2 red bell pepper, diced
2 cloves chopped garlic
1/2 C chopped fresh Italian parsley
1/4 C minced mint leaves

Dressing

1/4 C olive oil
2 T fresh lemon juice
salt & pepper to taste

This is good with everything! I’ve even had it as a side with scrambled eggs for breakfast. It’s light but full of flavor and the mint adds a refreshing quality.
